I am setting up a server and SSD as the main drive and want to copy the data To a cheaper drive as a block-level backup (e.g. RAID1).

This should work, but I want to remind you that the only time you will see a substantial increase in the performance of a conventional drive using SSD is random read, spindle Drives are not good at it. If your workload does have a 70% reading (like most people do), even synchronization won’t be that bad.
