I was also surprised when I found out that iTunes does not even need to run for all this work. Also, I don’t remember having to authenticate in any way (Apple ID or something like that) I just plugged in the device via USB and left.
I have been searching for a few days and didn’t even find any hint that this is even possible. But we know it is.

I am trying to use the mac app DiskAid, And found that it can do everything I need in the app I’m writing. DiskAid seems to have full access to the file system on the iPad. This is not limited to apps sharing files on the iPad – not a long shot. DiskAid looks at everything on the device All files of the application (sharers or others). It is not limited to the files in the Documents directory of each application. It treats all files as the root level.

There is information on DigiDNA blog, they are using Apple mobile device service library, they said this is the driver of Apple device. A Google search to the library took me to the Iphone Wiki website Regarding the reverse engineered C header files needed to link to the library. Hope it will be useful.
