Using commercial software, there are usually commercial reasons to reach 1.0 [Ready or not] ; However, open source software does not have such pressure. The fact that it is an active project is enough for most people.

Red5 is considered a de facto alternative to Flash Media Server in the community. I will download it and test it according to your specific use case .

The version numbers of open source products are always tricky. You can say that Red5 has not yet released 1.0. Or you can say that they have 5 major versions released. From Wiki; Where are the five “final” versions.
